I used Simple Sidebars to create a unique sidebar for my blog posts. Of course, now I noticed I've been forgetting to apply it! So what's the best way to have it just show up automatically on all posts in the "blog" category?
With the following code in child theme's functions.php, all single Posts that belong to 'blog' category will display the contents of 'blog-posts' sidebar that has been created with Genesis Simple Sidebars. Other sections of the site will continue to display the widgets in standard Primary Sidebar.

I have tried this several times (following your process) and its not working for me.
It displays the primary sidebar and then it also displays the new sidebar.
I actually just changed manually on a post. Now its showing the new sidebar twice.
The problem is Genesis Connect for WooCommerce.
I just deactivated that plugin your script works fine.
How do I get it to work when Genesis Connect for WooCommerce is activated?
