On a website I am currently working on the active theme is Dynamik, a commercial child theme for Genesis. There's a YouTube video in the content on homepage inserted via the WordPress oEmbed that automatically inserts the player by detecting video URL in the following format:
http://www.youtube.com/watch?v=4EErMxbKhLM
The video is not responsive at smaller widths and gets cut off like this:

I followed your steps as above. But the oembed doesn’t seem to work. I have also tried the [embed] shortcode doesn’t seem to work. I have has trouble with this before. Maybe I am doing something very simple wrong.

When you say
“2) Created a file named say, jquery.fitvids.init.js having the following in the same path”
does this mean that this ‘jquery.fitvids.init.js’ file should be saved to wp-content/js ?
